I consistently got bored with jobs after having them for a year. Like you said, once the initial ramp up of learning had plateaued, I wanted to move up or move on and organizations didn’t move quickly enough for me. I found consulting was a great fit. Each new gig, each new client, etc is different with a a different culture and different challenge so I’m always having to ramp up. Just a thought for you if you need to have a paying gig.
