@Michael it sounds like you are doing quite a great job! I released 30 pounds last year and have kept it off all year. I actually have not had any processed carbs or any starches at all this past year, just some greens I introduced in the past couple months. What helped me make the change was telling myself that I just don’t eat carbs as that is not who I am anymore. I repeat this whenever the narrative comes up. As with adapting any other habit or change, some are more challenging than others. I believe that I have worked a long time at this….I gave up sugar years ago…and this was a long time coming. There are certain foods that I still would love to eat, however, they just do not fit in with what health level I want to retain at my current age right now. I hope this helps!
